I came up with these great omelet recipes when I used to get up early to make my Mom one every morning. I dubbed them her "Momelets" but I'm sure she wouldn't mind me sharing them with you!
Use these on mornings when you have 10 extra minutes to make something out-of-the ordinary. Most of us pretty much eat the same thing for breakfast day in and day out.
Omelets are great foundation for all sorts of unusual and experimental toppings to break the old routine. Here you’ll find some great combinations of ingredients to get your mind ticking.
And as with many things, once you get the hang of making them, you’ll find yourself coming up with your own ideas for filling up these little beauties. One of the wonderful parts about them is they are so versatile, quick and yet so delicious at the same time.
Oh and one last thing before we get started: omelets make a wonderful snappy dinner. If you’re eating alone, or just need something speedy, whip up one of these, pair it with some mixed greens and a glass of red wine for a super easy, healthy dinner.

1. Prepare your ingredients. |

2. Put your pan on medium heat for several minutes. You want it to get so hot that the butter sizzles immediately when you add it but not so hot that the butter burns. |

3. Add the butter and let it sizzle as you swirl it around the pan and make sure the surface is coated. |

4. Pour in your beaten eggs. |
|
5. Place your desired toppings on one side of the omelet. I used cherry tomatoes, mushrooms, Parmesan and spices here. |

6. Cover the pan with a lid for about 3 minutes. This is a really great time to put things away and wash your knife and cutting board. |

7. Before you try to remove the omelet from the pan, loosen the edges by running a spatula around the sides. |

8. Flip in half. |
